Carrot Cheese Cake Recipe

Ingredients

  • 250g butter
  • 250g caster sugar
  • 3 eggs
  • 1˝ tsp vanilla essence
  • 250g cream cheese
  • 1˝ tsp bicarbonate of soda
  • 250ml fresh milk
  • A pinch of salt
  • 100g raisins/ sultanas
  • Half cup of walnuts
  • 1 tbsp grated carrots
  • Almond slices

Method

  1. Combine all ingredients except raisins, walnuts and grated carrots.
  2. Beat the combination of ingredients until light and creamy.
  3. Add the remaining ingredients such as walnuts, raisins and carrots and beat for another 2 minutes.
  4. Pour the cheese batter into an 8" greased cake pan and bake in a preheated oven at temperature of 170°C for about 40 minutes.
