| Blackberry Cheese Cake Recipe |
Ingredients |
Cheese Cake Base
- Around 16 pieces of digestive cookies, crushed finely
- 300g cereal corn flakes, crushed finely
- 3 tbsp brown sugar
- 3 tbsp butter
Cream Cheese
- 750g cream cheese, softened
- 225g caster sugar
- 1 tbsp corn flour
- 2 eggs
- 150 ml blackberry or blueberry yoghurt
- 1 tin of blackberries, drained all the syrup

Preparation

- Mix the crushed digestive cookies and cereals together. Then add in the sugar and butter and mix evenly.
- Press the cookies base evenly onto the bottom of cake tin that is greased with butter.
- Bake the base for about 5 minutes and set it aside.
- To prepare the cheese filling, beat the cream cheese and sugar for about 5 minutes.
- Proceed to add in sifted corn flour and continue to beat until creamy.
- Add in eggs gradually and mix evenly before adding in blackberry yoghurt.
- Pour the cheese filling into the cake tin and steam-bake in preheated oven for half hour at temperature of 160°C.
- After baking, turn off the oven heat but leave the cheese cake in oven for about an hour before removing the cake from oven.
- Refrigerate the cake after the cake is removed from oven.
- Proceed to top the cheese cake with blackberries jam if desired.
