Blackberry Cheese Cake Recipe

Ingredients

 Cheese Cake Base
  • Around 16 pieces of digestive cookies, crushed finely
  • 300g cereal corn flakes, crushed finely
  • 3 tbsp brown sugar
  • 3 tbsp butter
 Cream Cheese
  • 750g cream cheese, softened
  • 225g caster sugar
  • 1 tbsp corn flour
  • 2 eggs
  • 150 ml blackberry or blueberry yoghurt
  • 1 tin of blackberries, drained all the syrup

Preparation

  1. Mix the crushed digestive cookies and cereals together. Then add in the sugar and butter and mix evenly.
  2. Press the cookies base evenly onto the bottom of cake tin that is greased with butter.
  3. Bake the base for about 5 minutes and set it aside.
  4. To prepare the cheese filling, beat the cream cheese and sugar for about 5 minutes.
  5. Proceed to add in sifted corn flour and continue to beat until creamy.
  6. Add in eggs gradually and mix evenly before adding in blackberry yoghurt.
  7. Pour the cheese filling into the cake tin and steam-bake in preheated oven for half hour at temperature of 160°C.
  8. After baking, turn off the oven heat but leave the cheese cake in oven for about an hour before removing the cake from oven.
  9. Refrigerate the cake after the cake is removed from oven.
  10. Proceed to top the cheese cake with blackberries jam if desired.
