Baked Cheese Cake Recipe |
Ingredients |
Base
- 250g digestive cookies, crushed
- 25g caster sugar
- 75g butter, melted
Cheese Filling
- 250g cream cheese
- 125g whipping cream
- 1 tbsp lemon juice
- 70g caster sugar
- 1 tsp vanilla essence
- 2 tbsp custard flour
- 3 egg whites

Method

- Combine all base ingredients evenly. Flatten and press the base mixture onto a spring form cake tin.
- Refrigerate the base for about 20 minutes.
- To prepare the cheese filling, beat the cream cheese first until it is creamy before
adding in whipping cream and lemon juice.
- Stir the cheese filling evenly, before adding in caster sugar slowly and followed by egg yolks and vanilla essence.
- Lastly add in custard flour. Set the cheese mixture aside.
- Next, beat the egg whites until soft peaks are formed. Fold the egg whites batter into the cheese filling. Stir the mixture evenly.
- Pour the cheese filling onto the cheesecake base and bake in preheated oven at temperature of 180°C for 30 minutes.
- After baking, leave the cheesecake in oven before turning off the heat.
- After the cake has cooled down, refrigerate the cake for about 4 hours before serving.
