Baked Cheese Cake Recipe

Ingredients

 Base
  • 250g digestive cookies, crushed
  • 25g caster sugar
  • 75g butter, melted
 Cheese Filling
  • 250g cream cheese
  • 125g whipping cream
  • 1 tbsp lemon juice
  • 70g caster sugar
  • 1 tsp vanilla essence
  • 2 tbsp custard flour
  • 3 egg whites

Method

  1. Combine all base ingredients evenly. Flatten and press the base mixture onto a spring form cake tin.
  2. Refrigerate the base for about 20 minutes.
  3. To prepare the cheese filling, beat the cream cheese first until it is creamy before adding in whipping cream and lemon juice.
  4. Stir the cheese filling evenly, before adding in caster sugar slowly and followed by egg yolks and vanilla essence.
  5. Lastly add in custard flour. Set the cheese mixture aside.
  6. Next, beat the egg whites until soft peaks are formed. Fold the egg whites batter into the cheese filling. Stir the mixture evenly.
  7. Pour the cheese filling onto the cheesecake base and bake in preheated oven at temperature of 180°C for 30 minutes.
  8. After baking, leave the cheesecake in oven before turning off the heat.
  9. After the cake has cooled down, refrigerate the cake for about 4 hours before serving.
