Prune Butter Cake

  • Ingredients

    Butter Cake

    A

  • 180 g of Eggs
  • 150 g of Sugar
  • 3 g of Salt
  • B

  • 150g of High Protein Flour
  • C

  • 200 g of Seedless Prunes
  • 125 g of Yoghurt drink
  • 5 g of Sodium Bicarbonate
  • D

  • 120 g of Melted Butter
  • E

  • 60 g of Toasted Walnuts
  • 60 g of Toasted Almond Nibs
  • Directions

    1. Mix ingredients (C) for at least 5 hours. Whisk ingredients (A) until light and fluffy.
    2. Add in sieved flour and mix evenly.
    3. Add the mixture from Step 1, ingredients (E) and melted butter and mix well.
    4. Pour batter into the mould and bake for 35-40 minutes.
