Orange Butter Cake

Ingredients

  • 250 g of pure creamy butter
  • 250 g of caster sugar
  • 4 eggs
  • 100 ml of fresh orange juice
  • Some orange rind
  • 250 g of self-raising flour
  • 30 g of ground almond
  • ˝ tsp of baking powder
  • Baking Utensils

  • 9" round cake tin
  • Preparation

    1. Beat butter and sugar till light and fluffy. Add in eggs one at a time. Beat until batter is light and creamy.
    2. Fold in flour and orange juice alternately until well mixed. Lastly add in rind.
    3. Pour mixture from Step 2 into a 9" greased and lined tin and bake at 160°C in a preheated oven for 55-60 minutes.
    4. Do not open oven door for the first 30 minutes or the cake may shrink.
