| Walnut Bundt Cake Recipe |
Ingredients |

- 100g raisins/ sultanas
- 80g superfine sugar
- 100g water
- 30g brown sugar
- 60g margarine, melted
- A pinch of salt
- 3 eggs
- 150g plain flour
- ¼ tsp soda bicarbonate
- ¼ tsp baking powder
- 150g walnuts, roasted and grounded

- Separate egg white and egg yolks. Mix plain flour, soda bicarbonate, baking powder, sift all of them and leave it aside.
- Steam the raisins, brown sugar, salt and 25g of superfine sugar together. Add in the melted margarine after steaming. Leave the sweetened raisins aside for a while. Add in egg yolk, plain flour (that has been sifted) and grounded walnuts.
- Beat egg whites until soft peaks have formed. Add in the remaining superfine sugar and beat until stiff peaks have formed. Fold the egg whites batter into the mixture from Step 2. Blend the batter evenly.
- Pour the batter into a cake tin that is already greased with butter or margarine. Bake the cake for 50 minutes in a preheated oven at temperature of 170ºC/ 350ºF.
