Bundt Cake Recipe

Ingredients

  • 175 g of softened butter
  • 175 g of caster (superfine) sugar
  • 3 eggs, beaten
  • 175 g of self-raising flour
  • 1 tsp of cinnamon powder
  • 1 tsp of grounded mixed spice (allspice)
  • 2 dessert apples, cored and grated
  • 2 tbsp of apple juice or milk
  • 25 g of flaked (slivered) almonds

Direction

  1. Preheat the oven at temperature of 180°C/ 350°F.
  2. Lightly grease a 25 cm/ 10" ovenproof ring mold.
  3. In a mixing bowl, beat the butter and sugar together until light and fluffy.
  4. Gradually add in beaten eggs, beating well after each addition, until fully incorporated.
  5. Sieve the flour and spices together, then carefully fold them into the creamed mixture.
  6. Stir in the grated apples and the apple juice or milk and mix well.
  7. Sprinkle the almonds around the base of the mould (mold) and spoon the cake mixture on top.
  8. Level the batter surface evenly with the back of the spoon.
  9. Bake in a preheated oven for 30 minutes until well risen and a fine skewer inserted into the centre comes out clean.
  10. Leave the cake to cool in the tin (pan) before turning out and transferring to a wire rack to cool completely.
  11. Serve the apple ring cut into slices.
 Baking Guide
  1. This cake can also be made in an 18 cm/ 7" round cake tin (pan) if you do not have an ovenproof ring mold.
