| Bundt Cake Recipe |
Ingredients |
- 175 g of softened butter
- 175 g of caster (superfine) sugar
- 3 eggs, beaten
- 175 g of self-raising flour
- 1 tsp of cinnamon powder
- 1 tsp of grounded mixed spice (allspice)
- 2 dessert apples, cored and grated
- 2 tbsp of apple juice or milk
- 25 g of flaked (slivered) almonds

Direction

- Preheat the oven at temperature of 180°C/ 350°F.
- Lightly grease a 25 cm/ 10" ovenproof ring mold.
- In a mixing bowl, beat the butter and sugar together until light and fluffy.
- Gradually add in beaten eggs, beating well after each addition, until fully incorporated.
- Sieve the flour and spices together, then carefully fold them into the creamed mixture.
- Stir in the grated apples and the apple juice or milk and mix well.
- Sprinkle the almonds around the base of the mould (mold) and spoon the cake mixture on top.
- Level the batter surface evenly with the back of the spoon.
- Bake in a preheated oven for 30 minutes until well risen and a fine skewer inserted into the centre comes out clean.
- Leave the cake to cool in the tin (pan) before turning out and transferring to a wire rack to cool completely.
- Serve the apple ring cut into slices.
Baking Guide
- This cake can also be made in an 18 cm/ 7" round cake tin (pan) if you do not have an ovenproof ring mold.
