| Waldorf Astoria Red Cake Recipe |
Ingredients |
- ½ cup vegetable shortening
- 1½ cups sugar
- 2 eggs
- 2¼ cup flour
- 2 tablespoons cocoa powder
- ½ teaspoon salt
- 1 cup buttermilk
- 2 oz red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 tablespoon vinegar
French Icing
- 1 cup milk
- 5 tablespoons flour
- 1 cup sugar
- 1 cup shortening
- 1 teaspoon vanilla extract
- A dash of salt

Method

- Preheat oven to 350ºF. Grease a 13 x 9 inches cake pan.
- Cream together the shortening and sugar. Add the eggs to the mixture.
- Sift together the flour, cocoa and salt and add to egg mixture alternately with the buttermilk.
- Add the food coloring and vanilla. Mix the baking soda with the vinegar and fold into the mixture.
- Pour into the prepared pan and bake for 30 to 35 minutes. When a toothpick inserted in the center comes out clean, remove and allow to cool.
- French icing: Stir the milk and flour together in a saucepan and cook over low heat until thickened. Beat to eliminate any lumps. Cool and add the remaining ingredients. Beat until the mixture is light and fluffy. Spread evenly over the cake.
