| Vanilla Almond Cake Recipe |
Ingredients |
Makes one 3-layers cake
- 3 cups sifted all purpose flour
- ¼ teaspoon double acting baking powder
- ½ teaspoon salt
- ¾ cup butter or margarine, softened
- 1¾cups sugar
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract
- 6 egg whites, unbeaten
- 1 cup milk
- ⅓ cup hot water
Chocolate Frosting
- 4 ounces marshmallows
- 2 squares unsweetened chocolate
- 2 tablespoons light corn syrup
- 4 tablespoons butter
- ¼ cup milk
- 4 cups sifted confectioners sugar
- 2 teaspoons vanilla extract
- ⅛ teaspoon salt

Method

- Preheat the oven to 375ºF.
- Sift together the first 3 ingredients, set aside.
- Beat the butter or margarine until fluffy and gradually blend in the sugar. Stir in the vanilla and almond extract.
- Beat in the egg whites, one at a time. Add the sifted dry ingredients alternately with the milk. Blend in the hot water.
- Grease and flour 3 round cake pans. Pour the batter into the pans and bake for 25 minutes. Cool 10 minutes in the pans, then turn out onto a rack to cool before icing.
Chocolate Frosting
- Combine the first 4 ingredients in top part of double boiler. Cook over hot water until the marshmallows and chocolate are melted.
- Blend the milk and sugar together, add the chocolate mixture, vanilla and salt and beat until smooth. Frost each layer of the cake.
