Vanilla Almond Cake Recipe

Ingredients

 Makes one 3-layers cake
  • 3 cups sifted all purpose flour
  • ¼ teaspoon double acting baking powder
  • ½ teaspoon salt
  • ¾ cup butter or margarine, softened
  • 1¾cups sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract
  • 6 egg whites, unbeaten
  • 1 cup milk
  • ⅓ cup hot water
 Chocolate Frosting
  • 4 ounces marshmallows
  • 2 squares unsweetened chocolate
  • 2 tablespoons light corn syrup
  • 4 tablespoons butter
  • ¼ cup milk
  • 4 cups sifted confectioners sugar
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt

Method

  1. Preheat the oven to 375ºF.
  2. Sift together the first 3 ingredients, set aside.
  3. Beat the butter or margarine until fluffy and gradually blend in the sugar. Stir in the vanilla and almond extract.
  4. Beat in the egg whites, one at a time. Add the sifted dry ingredients alternately with the milk. Blend in the hot water.
  5. Grease and flour 3 round cake pans. Pour the batter into the pans and bake for 25 minutes. Cool 10 minutes in the pans, then turn out onto a rack to cool before icing.
 Chocolate Frosting
  1. Combine the first 4 ingredients in top part of double boiler. Cook over hot water until the marshmallows and chocolate are melted.
  2. Blend the milk and sugar together, add the chocolate mixture, vanilla and salt and beat until smooth. Frost each layer of the cake.
