Snowball Cake Recipe

Ingredients

  • 2 packages unflavored gelatin
  • ¼ cup cold water
  • ¾ cup boiling water
  • 1 large angel food cake
  • 2 cartons whipped cream
  • 1 lemon, juice extracted
  • 18 oz crushed pineapple from tin
  • ½ cup sugar
  • 1 cup coconut, shredded

Method

  1. Dissolve the gelatin in the ¼ cup cold water and add to the boiling water. Set aside to cool.
  2. Break the cake into bite-sized pieces and place in a large bowl.
  3. Fold the whipped cream, lemon juice, pineapple and sugar into gelatin mixture. Pour this over the cake pieces.
  4. Press into a 9 x 13 inches pan. Sprinkle the coconut over the top. Chill overnight.
