Mississippi Mud Cake Recipe

Ingredients

  • 2 cups sugar
  • 1 cup shortening
  • 4 eggs
  • 1½ cups flour
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 cup pecans, finely chopped
 Icing
  • ⅓ cup cocoa powder
  • 1 pound confectioner's sugar
  • 1 cup margarine, melted
  • 1 teaspoon vanilla extract
  • 1 cup pecans, finely chopped

Method

  1. Preheat oven to 350ºF. Grease a 9 x 13 inches pan.
  2. Cream the sugar and shortening, add the eggs and beat well. Add the flour, cocoa and salt and beat well.
  3. Stir in the vanilla and nuts. Beat the mixture thoroughly.
  4. Pour into the prepared pan and bake for 25 minutes. Remove from the oven to cool down.
  5. To prepare the icing, sift together the cocoa and confectioner's sugar. Add the melted margarine, vanilla and pecans. Beat together and pour over the cake.
