| Mississippi Mud Cake Recipe |
Ingredients |
- 2 cups sugar
- 1 cup shortening
- 4 eggs
- 1½ cups flour
- ⅓ cup cocoa powder
- ¼ teaspoon salt
- 1 tablespoon vanilla extract
- 1 cup pecans, finely chopped
Icing
- ⅓ cup cocoa powder
- 1 pound confectioner's sugar
- 1 cup margarine, melted
- 1 teaspoon vanilla extract
- 1 cup pecans, finely chopped

Method
|
- Preheat oven to 350ºF. Grease a 9 x 13 inches pan.
- Cream the sugar and shortening, add the eggs and beat well. Add the flour, cocoa and salt and beat well.
- Stir in the vanilla and nuts. Beat the mixture thoroughly.
- Pour into the prepared pan and bake for 25 minutes. Remove from the oven to cool down.
- To prepare the icing, sift together the cocoa and confectioner's sugar. Add the melted margarine, vanilla and pecans. Beat together and pour over the cake.
