| Coconut Pound Cake Recipe |
Ingredients |
- 1½ butter or margarine
- 3 cups sugar
- 6 eggs
- 3 cups cake flour
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 6 oz coconut, shredded

Method

- Preheat the oven to 350ºF. Grease a 10 inches tube pan.
- Cream the butter or margarine and add the sugar slowly, beating until light and fluffy. Add the eggs, one at a time, beating after each addition.
- Mix all ingredients together, sift one. Add alternatively to the butter mixture, with the sour cream, ending with the flour mixture. Add the vanilla.
- Fold in the shredded coconut. Bake for about 1 hour and 20 minutes.
