Coconut Pound Cake Recipe

Ingredients

  • 1½ butter or margarine
  • 3 cups sugar
  • 6 eggs
  • 3 cups cake flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 6 oz coconut, shredded

Method

  1. Preheat the oven to 350ºF. Grease a 10 inches tube pan.
  2. Cream the butter or margarine and add the sugar slowly, beating until light and fluffy. Add the eggs, one at a time, beating after each addition.
  3. Mix all ingredients together, sift one. Add alternatively to the butter mixture, with the sour cream, ending with the flour mixture. Add the vanilla.
  4. Fold in the shredded coconut. Bake for about 1 hour and 20 minutes.
