| Blackberry Jam Cake Recipe |
Ingredients |
- 2 cups sugar
- 1 cup butter
- 3 eggs
- 1 cup blackberry jam
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon allspice
- 1 cup coconut
- 1 cup pecans, finely chopped
- 1½ cups walnuts, finely chopped
- 1 cup buttermilk
Icing
- 1 pound brown sugar
- 14 oz can evaporated milk
- 1 cup/ 2 sticks margarine
- 1 pound marshmallows
- 1 cup pecan pieces
- 1 cup white raisins
- 1 cup coconut

Method

- Preheat oven to 375ºF. Grease a 9 x 13 inches pan.
- Cream together the sugar, butter, eggs and jam. Stir together the flour, baking soda, allspice, coconut, pecans and walnuts, then add to the butter mixture alternately with the buttermilk.
- Pour into the prepared pan and bake for 35 to 45 minutes.
- To prepare the icing, mix together the brown sugar, evaporated milk, and margarine and cook until it reaches the soft ball stage.
- Stir in the marshmallows, pecans, raisins and coconut. Spread on the cake while it is still a little warm.
