Blackberry Jam Cake Recipe

Ingredients

  • 2 cups sugar
  • 1 cup butter
  • 3 eggs
  • 1 cup blackberry jam
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon allspice
  • 1 cup coconut
  • 1 cup pecans, finely chopped
  • 1½ cups walnuts, finely chopped
  • 1 cup buttermilk
 Icing
  • 1 pound brown sugar
  • 14 oz can evaporated milk
  • 1 cup/ 2 sticks margarine
  • 1 pound marshmallows
  • 1 cup pecan pieces
  • 1 cup white raisins
  • 1 cup coconut

Method

  1. Preheat oven to 375ºF. Grease a 9 x 13 inches pan.
  2. Cream together the sugar, butter, eggs and jam. Stir together the flour, baking soda, allspice, coconut, pecans and walnuts, then add to the butter mixture alternately with the buttermilk.
  3. Pour into the prepared pan and bake for 35 to 45 minutes.
  4. To prepare the icing, mix together the brown sugar, evaporated milk, and margarine and cook until it reaches the soft ball stage.
  5. Stir in the marshmallows, pecans, raisins and coconut. Spread on the cake while it is still a little warm.
