| Berries and Cream Cake Recipe |
Ingredients |
Makes one standard loaf pan
- 1⅓ cups sweetened condensed milk
- ⅓ cup lemon juice
- 1 tablespoon lemon rind, grated
- 2 cups fresh strawberries
- 1 cup heavy cream
- 8 lady fingers

Method

- Combine the first 3 ingredients. Fold in the berries.
- Whip ˝ cup of the cream until stiff and fold into the milk mixture. Split the lady fingers and line a 9 x 5 x 3 inches loaf pan.
- Pour the mixture into pan and refrigerate for 3 hours.
- To remove the cake, run the spatula around the sides and invert the pan.
- Whip the remaining cream. Spread on the sides and top and decorate with more berries.
