Berries and Cream Cake Recipe

Ingredients

 Makes one standard loaf pan
  • 1⅓ cups sweetened condensed milk
  • ⅓ cup lemon juice
  • 1 tablespoon lemon rind, grated
  • 2 cups fresh strawberries
  • 1 cup heavy cream
  • 8 lady fingers

Method

  1. Combine the first 3 ingredients. Fold in the berries.
  2. Whip ˝ cup of the cream until stiff and fold into the milk mixture. Split the lady fingers and line a 9 x 5 x 3 inches loaf pan.
  3. Pour the mixture into pan and refrigerate for 3 hours.
  4. To remove the cake, run the spatula around the sides and invert the pan.
  5. Whip the remaining cream. Spread on the sides and top and decorate with more berries.
